Commissary is a section in the hotel that has a function as a storage area, and the provision of vegetables and fruits to be distributed keseruh outlets and restaurants there dihotel. Hygiene and sanitation are needed to keep and maintain the workplace always clean and tidy. The formulation of this problem concerning 'The influence of hygiene and sanitation of commissary section on storage, provision of vegetables and fruits in Bali hotel conrad' is how the effect of hygiene and sanitation applied in the commissary section on storage, provision of vegetables and fruit at Conrad Hotel Bali. Results Overall showed that independent variables of hygiene and sanitation have an effect on dependent variable of storage, provision of vegetables and fruit. Evidenced by statements in a valid questionnaire indicated by the result of r count greater than r table (0.388), test results reliability test, indicating the level of all items statement on the questionnaire is reliable indicated by the results of ? count greater than 0.6. Magnitude of influence is 56%. This shows the hygiene and sanitation variables affect the storage variable, the provision of vegetables and fruits. Regression of independent variable of hygiene and sanitation have an effect on dependent variable with result of r value equal to 0.75, it means regression test has high relation between variable. Hygiene and sanitation have a positive effect on storage, provision of vegetables and fruits, as evidenced by the value of T arithmetic 8.31 greater than t table 2.064.
